Set a collection cut-off for each shop. Orders before it are for today; after it, they're for the next day you're open.
Customers can order as far ahead as you allow, so a regular can sort the whole week at once. Mark a bank holiday as closed and nobody can order for it.

Granary not white, extra cheese, no mayo. Customers choose it themselves, so the order is right before you've touched it.
Once they have an account, their usual sits at the top of your menu and goes in the basket in one tap. The regular who gets what they want every time keeps coming back.

Every bag has a name on it, and it's paid for already if you take payment online. There's no choosing, no card machine and no change at the counter.
On Pro, a label prints for each order by itself. It carries the allergens for every item, which helps with Natasha's Law.

When a basket qualifies, Pekkish spots it and gives the customer the best price, even across two or three deals in one order. Nobody has to ask, and nobody works it out at the till.

Your customer list shows who has ordered in the last month, and who hasn't been back since.
Send the ones who've drifted a message from the shop, with a voucher attached if you like. It goes to customers who've agreed to hear from you.
