The fee reduction from 3.5% to 2.5% covers the £19 monthly subscription at £1,900 a month in orders.
That's roughly £440 a week — a couple of dozen lunches a day. Above that, Pro is cheaper than Free even before the operational value of auto-printing.

Your monthly subscription (if any) and your platform fee are billed together at the end of each month via Stripe.
The platform fee is calculated on your net GMV — every order net of refunds. If you refund an order, that order doesn't count toward the fee. A refund that lands after the period closes reduces the next period's bill.
You can change plans at any time. The new rate applies from the start of the next billing period.
Card payments run through your own Stripe account, so Stripe's standard card processing fee applies to each online order and goes to Stripe, not Pekkish — separate from anything above. Cash and card-machine orders on collection have no processing fee.
